olives seedling contain in their composition a glycosides bitter agent giving name is (Oleuropein) (C25H32O10).

This agent can be killed bacteria so it should be removing this agent befor pickled commence to getting rid of the bitter taste.
for removing this agent from the fruit or plant alkaline must be used ,during the treatment the agent will release to (caffeic acid) and other compose.
