The Food Safety Authority of Ireland have kindly made available on their web site a fantastic number of publications including leaflets, guides and so forth - most of which are free to download. Of special interest to members are a range of HACCP leaflets including: What is HACCP? HACCP Terminology Explained, How to Select an External HACCP Consultant, HACCP Catering and HACCP Butcher Shops /Meat Counter.

There are also three great Food Safety Training Guides ranging from beginner to advanced.
