Hi lostvaldivia,

 

I suggest you have a look at some Dairy Product textbooks where you will often find a whole section on cheese / haccp. For example Dairy Microbiology Handbook / Robinson.

 

There is also a lot on offer if you google "haccp plan cheese" (no quotes) albeit some examples are rather amazing, and not in a good way, eg -
