Dark Area Within Roast Beef Dangerous? Rate Topic: -----

Cooked some roast beef yesterday and was slicing a little off it today when I noticed a dark patch on the cut surface and the slice.

I can't figure out what it is. Main thing: would it possibly be dangerous?

Too long in the sun perhaps ? :smile:
Insufficiently large cooking container ?

I'm assuming the colour was evident directly after roasting.

Well, if you hv experienced no desires to run to the toilet within 12 hrs, probably safe from microbiological toxins.
Maybe another 2 days before can assume safe from attack by sporeable invasive bacteria. Viruses less sure.
If chemical hazard, it's anybody's guess I'm afraid.

Another question: it was inside the piece, and was visible when you cut it, or it was on the surface of the piece? Looks like a bruise to me as well, but a bit dark.

Possibly due to an injection? Needles would cause deep tissue damage.
