Now I am trying to make master cleaning schedule for production area. But I don't have references about standard disinfection (such as : kind of disinfectant and concentration) that permitted to be used. Beside that, I need to know a frequency of using disinfectant.

I hope someone can explain to me and may be give me some references.

Who is your chemical supplier?

We are using multi clean product. In Product descriptions there is information about the concentration should be used, but there is no information about how many times we should clean the area when use this product. Is there any standard of cleaning frequency that can be used for our reference?

I beleive that cleaning frequency would depend on your operation (product, equipment, work flow, GMP preactices, etc.). This is something you'll have to do by developing your procedures and schedules (swab studies, etc.). Some use ATP, but I don't hold a lot of faith in the methodology. You could probably call in a servive to review you operation and give you some suggestions about what you should be looking for and what type of frequencies for cleaning and/or sanitation are recommended, but with some research you or your Sanitation Supervisor should be able to accomplish this. There are classes/seminars on this subject by the way.

The supplier of your chemicals should be able to demonstrate the suitability of the products to be use in a food handling environment and recommend the concentration and temperature for use.

thank you so much for the informations. I will try to get trial for the disinfectant that we used.
but I need some references about hygiene sanitation and sample of sanitation schedule form. I really hope someone give me some references.

We have our master cleaning schedule broken down into:

Daily requirements
Weekly requirements
Monthly requirements
Yearly requirements
Production Cycle requirements.

It would all depend on your production cycle what areas may need more regular cleaning because of build ups and dirt, food contact surfaces, mirco testing and so much more.

We run an 18-21 day 24/7 production cycle shut down for one day for a deep clean and start back up. All sections of the master cleaning schedule are based on our production cycle. So again you would design or master cleaning schedule on what your plant is producing. For example a meat plant must clean up daily all areas of the facility.
