Good evening
Please can someone help me! I am looking for a cake/baked goods haccp template. I have only generated dairy related haccp studies before and this is going to be my new challenge.
I would be very grateful of any guidance.
Thanks
Sd

Hi SD1981,

you are located in UK and I assume you company might be a member of the national sweets association which will be a member of Caobico. Caobisco is providing this document which includes HACCP for Fine Bakery Wares, Chocolates and Confectionary.

added by Charles.C, 040813 - Document is  totally garbled array of text characters and extremely long. I hv copied it all onto this word doc. for posterity and deleted the original -

Attached File  garbled text.doc   219.5KB   127 downloads

Sorry that I can not provide this document in this forum due to legal reasons.

We manufacture a bakery mix that is baked by the customer. Is your product baked in house or do your customers complete the baking?

Dear Rgds / Charles.C

I am Ph.D student and I download haccp plan cheese cake. Thank you so much but I couldn't find  the title of book since It is necessary for me to write the resource for my seminar please help me and find it, if it is possible, also have you seen any HACCP plan for layer cake , shortened cake or sponge cake do you have any text about them?

Your file will be very useful for my seminar.

Thanks a lot,

aida,

I think the example from Charles C. is from the following book:

Food Industry Briefing Series: HACCP
Sara Mortimore, Carol Wallace

However, wait for confirmation...

Thanks Charles,

Lots of useful stuff in this document.

I don't agree with some parts for example the chocolate flakes control as a CCP, if it is a CCP I would want to test it and positive release it myself. Accepting based on COA is more like a prerequisite control. Also I'm not sure how the significant hazards were determined?

Regards,

Tony

Here in the US we have gone from a standard HACCP plan to a food safety Plan which simply adds preventative controls. Attached is a link to a simple template that may help you.

Best of luck!
