Hello all,

For a HACCP plan, we have about 5 for the different commodities we store. The plan are identical, only difference is the name of the commodity.

Is it possible to simplify to just one?

We are adding more commodities and I would hate to create one for each commodity.

It's all the same process flow, we do not repack.

Only receive, store and ship.

Thanks in advance

Dear CaliforniaS,

I assume "Cold Store is ca. -18degC and not ca.+ 4degC ??

So the CCP(s) is ??

In my product (seafood) experience / -18degC, the answer is zero so my response would be equally simple.

If your process is the same, and it's just the product that is different, then I don't see why not!

I used to work at a plant that had more than 300 sku's, and we only had 2 HACCP plans!

Hi,

I also work for a cold storage company. If the process is the same and the temperature, handling and storage requirements are the same for each product type then 1 hazard analysis is adequate. I have a separate hazard analysis for frozen, chilled and ambient product as the process and requirements differ.

Hope this helps.

Hello,

I have a wonder like that: With cold storage condition so that mean why HACCP plan for seafood don't have microorganisim CCP. And CCP Tree Decision can not use for identify CCP in seafood and slaughter also? If not, how we can control CCP in seafood plant.

Thanks and best regards.
