Hi All

 

 

Please can someone give me some guidance on what is considered a 'high risk food'?

We slice fresh produce (no washing process or additives).

Hi Hannah,

 

Opinions vary somewhat with location and criteria. And maybe FS Standard.

 

Here are 3 Australian comments, the last one being the most technical.

 

I presume yr product is RTE/chilled storage. Sounds like high risk (or in some systems - High care)  unless SQF categorises in its own sweet way. What does the Guidance say ?
