I am working in a Bakery production unit in Dubai and it is a new born company. So i wish to implement HACCP and get HACCP certification which is compulsory in UAE for food supply. As a first step i created a clear HACCP Manuel and started its Documentation. with the help of ifsqn i included all main checklists. So can anybody help me to move ahead.. what is the next step i should do... ? Is Internal Audit is Compulsory for HACCP Certification? and Is consultancy is mandatory if my Manuel is perfect? please guide.....

Firstly well done and great news you have found the IFSQN useful.  Fundamental to an effective Food Safety & Quality Management system is to have all of the prerequisite procedures operating such as training, GMP, pest control, cleaning, internal audit and many more.  You need these as well as HACCP.  Are you trying to achieve a GFSI standard?  If so they all require prerequisite procedures.

 

A consultant is not mandatory.  You only need one if they can provide you with knowledge, experience or time that you do not have in-house.
