This webinar discusses the importance of validating food safety control measures to ensure food safety management system capability. Validation of food safety control measures is essential to ensure that a food safety management system will be capable of producing safe food and remains effective over a period of time. Validation involves examining theoretically the scientific justifications for the control measures identified and practically challenging them to determine they will be suitable and capable of consistently achieving the required level of control to ensure safe food.

 Kirsten: How do you validate CCPs (metal detectors) that have been in place for years, are tested (verified) multiple times for days? Then how do you document it? 
 Carlito: In your experience, how do we motivate the micro cottage and small enterprises to implement HACCP then verify and validate
 Kirsten: Sorry - verified multiple times PER DAY
 Yusufu: @ Kirsten, you would need an external company to come in once a year to validate them for you. That's what we do and it satisfies the Safe Quality Food auditors.
 pamela: @ Kirsten: in Food industries, I validated my Metal detector CCP by a third part company (fr example: the metal dector siupplier or your tests strips providers..)

 Lupita: Great question Kirsten, we used pur records to validate that the metal detector was effective and the certificaton auditor told us not to use our own records
 Yusufu: @Kirsten, we use the company which supplied them to us. We monitor them daily, a supervisor verifies that the technician is following the metal detector SOP daily. They all document.
 Kirsten: Yusufu - really? Is it about running calibration checks? I can't imagine an outside company would validate?
 Carlos: @Yusufu, that is calibration, not validation I think
 Ruth: Kirsten, I was just going to say the same thing, an external maintenance contractor - usually the manufacturer of the metal detector requires to service it on a yearly basis and validate its working efficiently and accurately
 Allan Stirling: what would be normal confidence intervals for SPC studies?
 Niels: @ Kirsten: we also do this once a year and also after every major break down. (by third party)
 Yusufu: @ Riuth, you're spot on. @ Carlos, it's validation buddy. Our Engineering team calibrates the metal detectors.

 Nuraini: Hello, from Malaysia. I'd like to know how do one validate uv light used to disinfect drinking water? Plant is new and is planning on implementing HACCP
 SuperBakery: most metal detectors are self calibrating, test strips can validate that calibration.  We check no less than 3 xs per shift.  The size of test strips must fit in you specs in your HACCP program
 Ruth: You are validatin that it is working accurately by calibrating it
 Carlos: I believe that Kirsteen how to demonstrate the MD is the effective control measure in her operation. 
 Dirk: @Hoa Tran, there are test kits such as chlorine strips to test for residue
 felicia: @nuraini,the UV light manufacturer have information on effectiveness of the use of UV to kill certain microbial
 william: Kirsten-we calibrate every 2 hours, verified twice daily by QA, and the manufacturer of equipment Services (validates working correctly) annually.  It works for SQF.
 Carlos: Validation = science  Verification = checking  Calibration = accuracy
 Ruth: Calibration is done by external companies, you are verifying that it is working on  the hourly basis
 sonia rosales: you can validate the allergens with some microbiological samples or you can do swaps that will give you the validation
 Nuraini: @felicia: so the plant can actually use the manufacturer spec manual as validation reference? Do they need to carry out full scale validation or can they do so say in the next 4 or 5 years? thank you for your reply
 Zaira: how do you validate a pest control program?
 william: Correct Ruth.  The manual describes it as calibrating.
 Hoa Tran: I like chlorine strip because chemical is not protein.
 Patrick: When it comes to CCP equipment e.g metal detectors or sterilizers, do we perfrom validation or qualification tests?
 Adam: @zaira you need to have traps and trend the number of captures
 Adam: @patrick we valid with test strips being scanned every two hours
 Yusufu: I think we should have a discussion on the forum about verification and validation in the Food Industry. Let me concentrate on the webinar for now. 
 Ruth: Valiodation metal detectors needs to be done on a product specific basis as different product size and weights will require different test pieces too - it is best to get an expert to give the advice - usually from the manufacturer of the metal detector
 Dirk: @Hoa Tran, you could also invest in ATP tests
 Zaira: @adam wouldnt the scheduled monitoring and trends would be verification?
 Hoa Tran: ATP  only detects protein, not chemical.
 sonia rosales: Remember that for allergens ATP's are not accurately because just will check if is clean., 
 felicia: @nuraini, youcan definitely reference on supplier experimental studies. You can further validate your process as needed

 Christina Terrell: We're currently working on validating our prerequisite programs and are relying on industry best practices for technical documentation.  Do you have any suggestions on validating PRPs?  For instance, site security as a justification for a bioterrorism hazard?
 Wayne: ATP is a verification, while microtesting is validation
 felicia: Microtesting is verification but analysis of the microtesting can be validation
 Wayne: That is true Felicia, depends on how you use the system

 Frank Sedzielarz: About recalls, the FDA considers this as a corrective action. The regulation may cite this as a "should". However, if the firm does not have a corrective plan in place they would be required to follow a plan outline in the subject regulation.
