[Scampi]

So our cement floors were intentionally cut after they cured (new construction) and the cuts were filled with a substance to make them smooth (cuts are for expansion so the floors don't crack). After a year and a half of production and sanitation they are peeling away.  Can anyone give me a good reason why they need to be replaced or can/should they simply be pealed away?

I agree with Tamale. It's all about harborage; whether it's by pests or microbes. If you work in flour, floor cracks can be your worst enemy. Flour will find its way to those cracks, and then you will find beetles and so forth living in them. Even if you don't work in flour, you just open yourself up to pest harborage.

 

Also, if you have wet processes, floor cracks can cause bacterial contamination. Water pooling and getting into those cracks could cause microbial growth; which is basically why floor drains are swabbed and cleaned on a regular basis (water pooling issues). You can clean drains, but you can't really clean cracks.
