Can anyone help me on what to put in the preliminary step to enable hazard analysis if there is no regulatory and statutory standard exists for the microbial load of the end product but you still test the end product and created your own microbiological limit?

Hi adrian.
You will need to generate a Product/Ingredient/Packaging specification for yr haccp plan. This is usually based on BCPA requirements and covers safety and non-safety factors.
The "B" safety factors will define the micro. hazards which need to be addressed in the haccp hazard analysis.
Typically, the micro.factors are related to microbial pathogens, eg Salmonella
