How to determine microbiological limit where no standard exists

Hi all,

 

 

Can anyone help me on what to put in the preliminary step to enable hazard analysis if there is no regulatory and statutory standard exists for the microbial load of the end product but you still test the end product and created your own microbiological limit?

Hi adrian.

 

You will need to generate a Product/Ingredient/Packaging  specification for yr haccp plan. This is usually based on BCPA requirements and covers safety and non-safety factors.

 

The "B" safety factors will define the micro. hazards which need to be addressed in the haccp hazard analysis.

 

Typically, the micro.factors are related to microbial pathogens, eg Salmonella

Hi Charles,

 

 

I have the "B" column in my chart. My concern is since i have identified possible microbiological hazards on my chart and my own limit. What should i write on the column in the analysis which states "Regulatory and Statutory Requirements"

PS - ISO22004 has considerable assistance regarding the selection of  "Standards" if no Regulatory value exists (it usually does for zero-tolerance items)

Thank you for the link..i'll look deeper onto them...btw, isn't it ISO22004 is the prescriptive PRP's for FSSC22000 implementation?
