quick question permitted max for sorbic acid in unstandardized foods  is 1000ppm and the rest of the sorbates  just say same as sorbic acid

is the max for the sorbates calculated as sorbic acid or not? or its a straight reference. The regulations do not really specify as they do with the sulphites.

please advise

Hi Dr Vu,

I don't know about unstandardized foods but, if it helps, this Canadian site refers limits for sorbates calculated as sorbic acid -
