dear all,

 

our brc audit is on 27 and 28 of this month. what are the things checked while reviewing food defence and authenticity. kindly give ideas about that.

Hello rani,

 

We've been audited last week. The auditor is not so focused on food defense coz BRC7 is more concern on EMA (Economically Motivated Adulteration). Prepare your vulnerability assessment on fraudulent activityrisk matrix and show the conclusion of your risk assessment, traceability of raw material, raw material risk assesment and approved supplier monitoring with evaluation. We got minor NC coz we did not evaluate the result of our monitoring.

We had our audit last week and Food defense and Food fraud was sadly not checked. But here is what I did:

 

For food defense I completed the risk assessment with the FDA Food Defense Plan Builder and each year with an internal audit the plan is being reviewed. Furthermore the locks on doors and other Food defense critical points are check with an audit.

 

For Food Fraud I made an risk assessment like our HACCP plan and each raw material group has:

- several kinds of frauds, like the product has been swapped with an cheap alternative, or organic product is not organic

- then there is a occurrence score, so how high is that chance the this occurs (from 0 - 5), this chance is based on incidents of the past (based on RASFF and www.foodfraud.org), profit, supplier and availability of the product

- then chance of detection, so how high is the chance that the fraud will be detected (from 0 – 5). This is based on visibility, are there analyses that can pinpoint the fraud (and are they affordable) and are there any sub processes.

- after this this risk is based on occurrence x detection. If the risk is higher than 10 we need to have extra measures.

 

This again is yearly checked in an internal audit, so checking both databases if there are new developments and internally if there is some new knowledge.

 

I think this is more than enough for the BRC standard

Hi Rani,

 

Dongilles' advice is very good and the (USA) FDA food defense plan builder will be a good start for food defense issues, although, as Redfox said, it is true that the BRC standard is more focussed on food fraud than food defense*.  The FDA has a whole page of resources for food defense, including the Food Defense Plan Builder here.  http://www.fda.gov/F...nse/default.htm

 

The food authenticity requirements in BRC Issue 7 include vulnerability assessments (Clause 5.4.2) and Dongilles has explained the BRC-recommended method for assessing raw materials very succinctly.  If you need a more detailed explanation of how to perform a vulnerability assessment on your raw materials, there is an excellent guide here:

Hello Rani,

 

Food defense is more broader than BRC7 EMA in a sense that it covers from raw materials till finished product. Unlike EMA it covers only raw materials. IMO, EMA is only a part of a food defense plan because it is also done maliciously to have economic gain. Though the motive is to make more profit, through the process a food safety issue could also arise. E.g. dilution liquid product with contaminated liquid.

The title of such webinar was FSSC 22000 version 4 that will be launched on october 2016.

Hi Esther,

 

Actually 2-3 posters here have, over last 6 months, tested the tool at first link above (food fraud) and found it defective. No idea if the problems have been resolved yet.

 

IIRC, this was originally a project of Wageningen Uni. Seemingly no longer.
