Using microwave to reheat chicken

Hi,

 

as we are a catering company based on cook and chill process , our customers will reheat their food the next day after delivery.

using microwave to reheat chicken had been connected to a smelly chicken complaints from our customers , since the majority of our customers will have their lunch at work they cant use convection oven for reheating .

what is other options that may be considered to over this issue?

- using only chicken breast.

- plate contain chicken + sauce + rice or pasta

Are the customers ensuring that the product is chilled right up to the reheating  in the microwave ie do they transport it from home  to  workplace in a chill bag and then put in a fridge or is it delivered straight to the workplace etc. Current temperature outside in Qatar will be similar to here in the UAE I guess ie mid to high forties C.

yes Temp today is 46 degrees . but customers are claiming that no temperature abuse from their side , and when we are sending the food to our staff (different branch ) they feel it is smelly as well

we assume that the using of microwave for reheating is the reason , is sending the chicken dry without a sauce will help? or using grill to cook the chicken before using oven will minimize  the water content ?

I don't  know a lot about ready meal processes but maybe you need to ensure that there is nothing wrong with the raw material (validated supplier, thawed under refrigeration etc if frozen) and that time/temperature is met at all points.
