Webinar Overview:

Statistical process control (SPC) is a method to improve or achieve quality control in a manufacturing process. Support productivity and quality improvement in your facility by designing and implementing a customized SPC program. This session will provide an overview of the SPC techniques and their application in the food industry, including process variation and how to measure it with SPC, control charts and basic concepts including types and uses. Additionally, this session will cover process capability, linking customer and internal specifications to process variations.

Do you think a level 2 site should be using spc?
SPC could be applied to any food safety measureable you have including CCP's.  Typically the Critical Limit on a CCP is assigned as the upper or lower specification. Control limit on the process should be a lot less than that or you are in danger of not meeting your critical limit, which has major product disposition issues.

May I know how do you differentiate SQC from SPC?
I assume you mean Statistical Quality Control? In this case, if you are using the process control limits to control the process then they could be considered to be similar in nature.

Is there any other formula aside from sloven formula could be used to determine the sample size?
If you are trying to determine a sample size to look at your distribution data that 100-300 samples over a reasonable period of time is sufficient.  If you are looking at sample size for sub-grouping than there are a number of variables that need to be taken into consideration.

Minimum number for accuracy would be 100.

If you continually monitoring water activity .7 should be the Upper Specification Limit.  Process limits will need to be determined by your results and the Upper Control Limit should be less than .7 or you will be in trouble.

Mode and Median are measures of Centre.

The value of standard deviation is relative to the data being analyzed so there is no "good" number.

The Critical Limit of a CCP can be used as a specification limit. Hopefully it will either be higher or lower than the respective upper and lower process control limits.

Choice of SPC software is dependant on a number of factors such as types of users, on-line vs off-line, interaction with other devices.
