Good day fellow members and professional. I will appreciate if anyone could assist me with the critical limit with validation for temperature of receiving frozen raw materials like chicks, beef and fish.

Hi Aliyu Angara,

 

A typical contractual specification is that the core temperature be <=(-18degC).

The cargo should also display no significant indications of experiencing thaw/freeze cycles during transportation.

Yes, the temperature should be around 18 - 20 degree C.

Some people use minimum -12c at receiving. Can someone help me with reference pls?

 

I cant seen to find any answer on Codex.

It has been discussed here a few times.

 

afaik the value -12degC is non-official although you can find it mentioned in various publications such as frozen transport,reception,haccp freezing plans. One example is in the last attachment (Pg9) in this link -

Another earlier post here noted/referenced that bacteria do not grow below -9.5degC so I guess there is a bit to spare. :smile:.

 

Regardless, you will also see many contracts similar to previous posts in this thread, ie considerably less "generous".
