Dear All,

I have one doubt and please anyone make me clear.

Our bakery storage freezer is limited space. That is why we are keeping together with meat (but with plastic pack) and ingredient (such as milk, cheese, yogurt, etc) in the same freezer, but different shelves.

Is that acceptable or safe to food from food safety point of view?

R,

May

Hello May,

Its better to have separate storage space. In case of limited storage space, I think it is acceptable if

Veg. foods are always stored above non-veg. foods and cooked foods above uncooked foods on separate racks in the refrigerator

Hello May,

we have a similar situation in our facility where storage areas are shared for multiple commodities. We try to store fruit / veg in one area, meat in another are of the storage etc. As Kick said above as long as everything is stored properly to minimize the risk of cross contamination from a cooked to uncooked, allergen, species that should be fine.

It depends -

(a) whether yr FS Standard (if any) accepts any such semi co-mingling

(b) Conceptually, on a risk assessment, primarily potential for cross-contamination and especially if RTE products involved.

JFI/example, in my own seafood auditing experience storage of chicken meat/fish in same area was considered unacceptable. Other systems may be more flexible.

Maybe, think refrigerators ?

Kind Regards,

Keep raw meat, poultry, and fish away from other foods so they don't contaminate them. This is probably why many fridges have a meat compartment in the bottom of the fridge. Ifyou are not storing uncooked meat/seafood on the lowest rack to prevent their juices from leaking onto the other foods.
