Determination of Preventive and Control Measures in Food Safety

Taking place:

Friday, October 13, 2017 - 03:00 PM - 04:00 PM UK Time

This is a 10.00 AM Eastern US Start

Presenter:

George Howlett, CEO, Safefood 360°

Webinar Overview:

An essential presentation for any food safety manager who is responsible for risk assessment and determination of control measures within a food safety plan. The presentation will demystify much of the language and complex logic normally associated with risk assessment models and decision trees, which prevent many food companies from obtaining their objective of producing robust and appropriate control measures.

Elizabeth : Im having trouble with Audio
Stuart : Doesn't the FDA now use the acornym HARPC ?
Kirsten : HARPC = Hazard Analysis and Risk-based Preventive Controls
Dennis Grayson : HARPC = Hazrad Analysis Risk based Preventative Controlss
Dennis Grayson : Sorry Kirsten
Kirsten : we' are a good team, Dennis!
James : Hi, am enjoying the Presentation.
Stuart : Yes, thank you Kristen & Dennis.  Not huge, just felt that since all the terms where being referenced, thought HARPC was missing.  Not big deal
JULIA RIBEIRO : HI everybody..sorry i am late..computer gave a little trouble
Dr.Muhammad Zeshan : Hello
Emily : with that last example I always wonder does "in the absence of a control" go all the way down to if people arent washing their hands?
Dionne Mills : hello from Trinidad and Tobago
Raquel : Hellor from Spain
Dr.Muhammad Zeshan : Good morning
Dr.Muhammad Zeshan : Sorry for late
Vickie : I can't connect
Dr.Muhammad Zeshan : Very nice presentation
Mark : Will you discuss radiological hazards as noted in FSMA?
Blossom : Hi from Canada
Donna Klemme : Hi, from Plymouth, WI
Michelle : Hello from Southeast Missouri
Mark : Will you discuss radiological hazards as noted in FSMA?
Shekhar Rajesh Shetty : Agreed mark the 4th hazard
Narongchai : Is the oPRP equal the PRP control measure in the process and look like the Sanitation PC or Allergen PC in HARPC?
Jamie : hello from Indaina
Marlise : Hallo from Zimbabwe
flora mari : what are the acceptable levels in control measure?
Camila : Nice, I work with HACCP but never heard of any other tree than the Codex one
Dr.M.Z : Hi
humberto : Does Preventive Control (Always)= CCP? Can you have Preventive Controls that have not been traditionally CCP's?
Dr.M.Z : Good afternoon
Rebeca : Hi
James : I think the presentation is covering HARPC though not written as a measure/system
Mahmoud : Is possible to send us this presentation?
Parker : humberto I think that a preventive control does not always equal a CCp
Simon Timperley : slides and recording will be emailed to all registrants later
Fatma : great
Kaushalya : thanks Simon
Dr.M.Z : Very good presentation
Larbi : what is the difference oPRP and a preventive control
James : Hello, james Wasike again from Uganda
Parker : Thank you, Sara!
Mahmoud : Thanks Simon
Stuart : Using your example, if a single magnet is not designed to eliminate a hazard but reduce it but not to an acceptable level alone but is part of a series of magnets to accomplish this then the Magnets should be a oPRP (correct) or CP or CCP?
Abdelhamid : this version of codex decision tree don't 't take in consideration PRPo . IXhat do you think about this
Abdelhamid : The view of decision tree aren't clear on the presentation
Sara : Parker I would say for example that this step is Storage you may have pathogen growth it there is tempreature abuse but if you have a kill step later (ex. cooking) then it won't be a CCP
Shuchi : Good question Stuart!
Mahmoud : I'd prefer Codex Decision tree - it is very simple and clear
Katherine : Please clarify if preventive measures and control measures would be different? thanks.
Larbi : Did seafood companies concerned with preventive control regulations
Eb : Yes, codex decision tree is very simple, but don't attend ISO22000 requirements because don't haver OPRP possibility.
DM : This is a grea model
Abdelhamid : Some decision tree take in considera the fact that  the monitoring should be continously in order to be a CCP other wise it will be PRPo . are you convainced with this
Fatma : I integrated all decision tree that exists on codex, ISO 22004 and simple one in 4 questions; is it specifcally designed?, intense to an unacceptable level?, feaseability to monitor?, is it last step to control
Niesha : @Simon: Is it possible that the questions being asked in the forum be shared along with their answers?
Raquel : Is there any software where I can use this decision tree according with ISO 22000 requirements. In order to make this a more efficient process
Katherine : In fact, the only difference between CCP and PRPo is the Critical Limit (a PRPo does not have one) but requires control measure, frequency, responsible, monitoring and verification as a CCP. does.
Elizabeth : is this webinar going to be available for reviewing
Danielle : Seconds @Niesha's request
Todd : Do we have to log in to download the whitepapers?
Jeff : Can we get a copy this powder point
Michael : Excellent presentation. I now have a better understanding for using the various decision trees
RALIJERSON : Thank you for this présentation ! Very clear and helpfull !
prachi jain : very nice presentation
Fatma : In that case; can we say that preventive controls cover all of OPRP, CCP and CP or all of controls inclusing PRP?
Jamie : Wow that was a lot of info.     Thanks
kristine : Is there a simple quantitative ranking for hazards that can be used that is somewhat standard?
James : oPRPS are basically for emergency situations sort of? or.
Parker : i'd love to see a webinar on radiologiical and economically motivated hazards
Minakshi : What is the difference between Q6 and q7
Richard : should Radiological be listed on the HACCP plan?
Jacqueline : Excellent presentation, thanks
kristine : HOw to determine significant or non-significant ahzard?
Tariq Usmani : Any example of a step where there are NO hazard?
James : what are the examples of non- significant hazards.
Kayleen : Is there a document stating standard hazards and how to deal with them?
Emily : follow up - so "in the absence of a control" assumes that PRP's ARE in place?
kristine : how do you determine if a hazard is significant or not?
Chris : @kristine - typically the use of a risk matrix would work
Stuart : did only I lose audio?
FLORA MELENDEZ : jackie o = operational in oPRP
milton delgado : Hito every body Milton DELGADO from  Ecuador
Yoga : iso22K .
Katherine : Can we conclude that preventive controls may be either CCP, PRP or PRPo? thanks!
Houman : Is metal detector  a default CCP for food manufacturing?  If someone wish to not have it as CCp, what she/he should prove/validate?
James : Is there a way we can get these quantitative ranking of hazards ie specific examples of hazards in the daily lifestyle operations.
Fatma : can we say that preventive controls cover all of OPRP, CCP and CP or all of controls including PRP?
afiwa : o=operational
Angie : I have watched several of these presentations and they are all very informative. I want to commend you on these presentations and have them. It would be great if you could have a presentation on FSMA requirements. These requirments are changing every year. This being ongoing and essential.
Parker : Where can we get the white papers that were discussed?
Yoga : ISO 22K DOES NOT REFER TO THE CODEX DECISION TREE BUT MAKE USE OF A SET OF CRITERIA FOR OPRP AND CCP. HOW WOULD YOU ADDRESS THIS?
Sara : Kristine, I use Canadian Reference Database for Hazard Identification, it's pretty useful
Paula : Parker -- they are at "safefood360.com/free-resources"
afiwa : are microbiological analysis considered a PRP  or a CCP? for exemple, re:eggs, is a salmonella analysis considered a PRP?
Chris : @Houman - if the metal detector is the LAST step in your process to remove or decrease the hazard (metal) to an acceptable level, then it MUST be a CCP. The only way to remove it as a CCP, would be to conduct a study to show that metal is not a significan
Parker : Thanks Paula!!
Paula : you are welcome!
afiwa : are microbiological analysis considered a PRP or a CCP? for exemple, re:eggs, is a salmonella analysis considered a PRP?
Simin : Very good presentation. Thank you for clarifications on Decision Trees.
nadia : to that one the Q4 will say that another step later will make it safe for the magnet so I can't see it as a ccp
Marlita : Do you have a white paper on how to validate a metal detector so that it can be used as a Preventive control?
Narongchai : All PRPs are defined in the ISO/TS 22002-X for ISO 22000 Certification.
prachi jain : CFIA's hazard database is a very useful tool for determining physical , chemical and biological hazards for a lot of elmwnts
Salawu hammed abolaji : Good presentation
Dennis Grayson : FSMA uses a term as significant:  Hazards that present the risk of Serious Adverse Health Consequences or Death to Humans and/or Animals (SAHCODHA) hazards.
Benhanifia mokhtar : Hello
nadia : good one Dennis
Elizabeth : thank you!
Emmanuel : are there protocols for trash collection in a food processing line
Eb : Excellent presentation! Thanks!
Narongchai : if the hazards can be controlled by PRPs. we will move the rest hazards to determine with ISO 22000 7.4.4 and assign to oPRP or CCP.
Atcharaporn : If the food additive manufacturing send their product to the factory who export their product to USA. Do the food additive manufacture need to implement PCQI human food?
Parker : awesome resources thank you so much!
Georgia : great presentation - thank you!
Steve Bell : Can we get a copy of this presentation
Lisa Wong : Great presentation, George!!
Raquel : Thank you :)
Judy : Atcharaporn- yes
Dr.M.Z : Great presentation, George
Annabelle : very informative. thank you.
Tariq Usmani : Thanks
MAite : Great presentation!
Ramarao : Excellent Presentation and prompt clarifications. Thank you.
Natalia Tsumanets : Thank you
Narongchai : @Atcharaporn, no the food addtivie factory will be the supplier for that exporter.
Shuchi : @atcharaporn- Yes they need to have PCQI, since they are supplying to a factory who is exporting to USA. So they would demand it later or sooner.
nadia : where were the resources again
Shijil : Is Gama radiation effective in preservation
Houman : Thank you!
Dennis Grayson : IFSQN is a great source for questions on the forms website
Jon : This webinar was scheduled for one hour  Please wrap it up.
Chris : @Jon - you can disconnect anytime you want
NARASIMHA MURTHY V H : thank you for good presentation.. It is indeed a very useful presentation
Angie : Dissconnect. People want their ?'s answered.
Panagiotis Lekkas : PCQUI IS NOT A PROGRAM IS AN INDIVIDUAL
Bryan Reynolds : We sell fruit pies that are baked at the store level.  They are traditionally considered shelf-stable and have a short shelf life of 4 days due to potential of mold growth.  Can we use that to explain why we do not perform environmental pathogen sampling?
milton delgado : thanks Simon for the oportunity to update our knowledges
Panagiotis Lekkas : PCQI is an individual not a program
Lewis : I believe it has to be reviewed and approved by a PCQI
Emily : No Dont!!
Parker : I don't agree with John!
Paula : Nadia....white papers are located at "safefood360.com/free-resources"
Christian : great presentation...thx very much
afiwa : thank you
Parker : The best presentation ever.
Panagiotis Lekkas : Thank you for your time

Marlita : thank you!
Katherine : Thank you so much! Great webinar!
Abdelhamid : Thank's a lot
Chris : Thanks again Simon!
Dale : You mentioned ISO, but what about FSSC is there anything in the guidelines that say if co-packers have to be held to the same standard as the facility
Neal : Thank you-
seda : Thanks :)
Eva : Thank you...excellent presentation
Judy : dale- yes
