Hi,

 

Good day.

 

I am working with an ice cream manufacturer and they want to use a moisture analyzer to quickly determine Total Solids of the ice cream mix (100% - % Moisture =  % Total Solids) AND then use a drying oven to get a more accurate Total Solids reading.

 

I do not think both are required - I think the moisture meter would be enough.

 

What is normally done in the ice cream industry? Do ice cream plants use a quick method AND the conventional method, or do they use only one method not two?

Hi srose ,

 

I worked before in ice cream factory , we used METTLER TOLEDO moisture analyzer Rapid method , we do not use the oven ,actually oven method consumed a long time so it  not practical specially for online tests , in the below link there is an example of this analyzer and compassion with the oven method ( P4 & P5)

However oven method could be used to validate the reliability of the rapid method as a part of the internal control plan .

Quick further question:

 

Is anyone familiar with the use of a commercial microwave for Total Solids testing of ice cream? See method quoted in abstract from Journal of Dairy Science below:

CEM is a company that specializes in microwaves for commercial testing applications, such as ice cream mix.  We actually use one in our lab.

No moving parts, very robust, and very easy to use.  Great repeatability as well.
