Is anybody having a simple training content to understand TACCP & VACCP.

 

Or may be any useful link.

Which FS Standard are you involved with ?

Reference standard is FSSC 22000 (food manufacturing) as per V 4.1

In additional requirement, food defense (threat assessment) and food fraud (vulnerability assessment) mentioned.

Hi Hardik,

 

The attached, undated, (draft) pdf may slightly assist for fssc22000 or simply increase the confusion. Looks lke fssc may hv somewhat decided to open yet one more approach following brc and sqf. I guess it may be too early to know exactly what fssc expect.

As a further illustration of the potential confusion, this "critically-oriented" link is quite readable but primarily in the context of using TACCP/VACCP for BRC which is not specifically required as per BRC Code.

Basically, one needs to know precisely what the respective FS Standards are expecting. BRC were the first GFSI-recognised standard to dive in to this arena and I think it took at least one year for their auditors to begin to decide on what response they hoped to see. Hopefully this meandering is not going to be repeated by SQF (who have "Guidanced" one "acceptable" route) and FSSC.

JFI this extract (Nov. 2017) is taken from a short NQA review of fssc22000 version 4.1 -

 

In Food Fraud Prevention clause, all organizations are required to documented and implement a vulnerability assessment procedure to identify potential vulnerabilities. Appropriate control measures must be put in place to reduce or eliminate these identified vulnerabilities. This has often been referred to as VACCP.

All policies, procedures and records are included in a food fraud prevention plan supported by the organization’s Food Safety Management System for all its products. The plan shall comply with applicable legislation. The clause Annual Review is now renamed to food fraud prevention plan.

Regarding Food Defense, it has gone from a PRP requirement only to a new requirement commonly known as TACCP.

To identify the threats, the organization shall assess the susceptibility of its products to potential food defense acts, such as sabotage, vandalism o terrorism.

The food defense plan must comply with legislation and its content (policies, procedures and records) shall be also supported by the organization's Food Safety Management Systems and by consequence reviewed together with it.

Note in above quote the "often referred to", and "commonly known as" phrases. FSSC is tiptoeing carefully around the terminologies.
