Hi all,

My company is producing 2 categories of seafood product (crumbed product and marinade product), and they are HACCP certified.

Recently our R&D team come out with a new product which is crumbed coated with sauce in within (let's think it as chicken cordon bleu in a seafood way).

10521283-chicken-schnitzel-cordon-blue-w

1) Can I categorize it as crumb product or it falls under another new category cause it has sauce and is crumbed?

2) Is there any regulatory requirement mentioned that of any product with sauce it should be categorized as marinade?

Please advise and provide guidance.

Thank you in advance.

Hi CB,

I anticipate that any specific answers to yr query will depend on your location and whether any particular FS Standard is involved (?).

Assuming neither product is RTE, I imagine from a HACCP POV that will both be categorised as raw seafood.

Kind Regards,

Hi Charles,

Indeed both products are under frozen seafood.

Because these products are selling in both EU and US market, and I'm not sure if there is any regulated clause defining how crumb product should be and should not be?

PLease advise.

Sorry but my experience only with plain crumbed products.

IMEX the only reliable information comes from the importer/customer. Countries within EU sometimes have different systems.
