What to include in a product specification?

We are contract packaging company. Packaging RTE snacks for our clients (brand owners). A client ask and we agreed to bake their granola. We have installed the necessary equipment, baking following and applying our SQF system procedures. Client provides ingredients, we use their recipe . I have my SQF audit in May. I need a specification sheet, I have a recipe and was trained by client. I know i need more. I'm having trouble finding a template or specification section headers to know what I should include.  We send product for CoA,  Any help or direction would greatly be appreciated.  Thanks much.

If you do micro or chem on the product, include those parameters as well. Otherwise in your situation, I would think whatever your customer expects would be your product spec. So if you must follow the recipe to the letter, then include that including bake times

 

Don't over think this one, the requirement is pretty straight forward

A few nitpicks -

One (consumer) omission is perhaps allergenicity ?

The micro.spec.for Y&M is for an ingredient ?

afaik "Total Coliform" is a terminology reserved for water.
