Dear All ,

I need to make sterilization for products that i have without dealing with chemicals or irradiation and also in the same time keep :

1. The organoleptic properties like (taste, color, etc.. )

2. Not having caking after sterilization.

The products are :

  • Dried onion kibbled
  • Dried onion powder

Does anyone have an experience in sterilizing like these products before?

Please give me your thoughts

Regards

Mohamed

In India, such products are mostly EtO (Ethylene Oxide) treated to reduce the microbial count and to kill any spores. But, it leaves very slight residues also.

May be you can check if ozonation is being conducted on these. It depends on your country's regulatory norm also about using ozone.

Dear Mohamed,

There is also the option of steam sterilization to take into consideration in your process design.

Kind regards,

Steam Sterilization can be a good option for any other product, but it will be difficult for Dried onion powder due to its hygroscopic characteristics.

You will have caking and organoleptic issues post treatment.

EtO (Ethylene Oxide)

is the only way if gamma irridation is not allowd!!

how do you eliminate plastic thread and hair while manufacturing and processing the same product?

Keep in mind, ETO is not allowed in certain countries.

With these product, it is imperative to have a good sourcing of the onion with minimal issues. A thorough examination of inclusions should be made on receiving/QA end.

IMO if you are processing (grinding) them at your facility, having a preliminary run of the raw material through the gravity table can help.
