Hello,

We are a frozen bread dough manufacturer and have been asked by a customer to provide a mycotoxin statement for our products.  Does anyone know what the preventative measures would be to ensure that products do not have mycotoxins?  I was thinking possibly our company Supply Chain program for the flour we receive etc.  If any one has been asked to provide a statement I would be super grateful if you wouldn't mind sharing the example.

Thank you very Much!

Generally the flour mill will provide a certificate of analysis listing alfatoxins and other mycotoxins that grow in soil

i assume you have HACCP Plans.

HACCP = Documented Specifications for Ingredients/Finished product ?

+ Incoming COAs ?

Kind Regards,

We do have a HACCP plan and we do have documented specifications for ingredients and finished products.  We also receive COA's for all of our ingredients.  This again goes back to Supply Chain I believe.  I will formulate a mycotoxin statement based on that too.  Thank you for the responses.

Dear Brendar,

For your statement on mycotoxins, I would like to add that a nuance in relation to your question. You asked:

"Does anyone know what the preventative measures would be to ensure that products do not have mycotoxins?"

Instead of saying "products do not have mycotoxins", it's better and more realistic to say: "all our products comply to all applicable legislation and regulations concerning mycotoxins".

Of course, you as a food producer need to assure that all the preventative measures for mycotoxins were taken in the supply chain.

I hope this information can help you further to edit your statement on mycotoxins.

Kind regards,

Gerard Heerkens
