My name is Greg. We just opened a specialty food store in small town America. Our health department is more stringent than any other county in the state.

We had a lot of fun with our hood. We couldn't just buy a hood and put it up. It had to be engineered and the plans had to be approved by the county engineer before we could even start.

Enough of that. I hope to learn some things here. Thanks for the opportunity to check things out and join in the "fun".
