Baking may or may not be a CCP depending on what you are baking!.
If we are talking about bread then the raw dough is perfectly safe to eat before baking and it is not critical to cook the dough thoroughly to assure food safety.

Dear All,

I had a further look round on the net for any examples of the direct “CDT” approach to selecting OPRPs as mentioned in previous posts.
Here is a quite nice-looking Excel tool based (I think) on the method. (I hv added a few bits of Google English under 1st input entry to (hopefully) clarify).
Comments welcome.

Hi,
don't you think is better to have, in the scheme, the decision tree analysis before the point 7.4.4 Control Measure Selection?

At the end of the decision tree you can know if the process can be take under controll with a CCP or a OPRP.

Thanks,

Mauro

Dear Mauro,

If you play with the input data a little, you will see that some pairs (eg M2/M2) immediately give conclusions for PRP/OPRP without continuing to the 4 Codex questions . The risk logic is perhaps debatable (aren't they all? ;) ) but I guess this pattern dictated the layout. Otherwise i would agree with you.

Hi Mauro

If you use the decision tree first for 7.4.4 Selection and assessment of control measures; how is your selection and categorization carried out using a logical approach that includes assessments with regard to ...................... a) - g)?

Tony

any updates on this?

I have found somewhere a Coca-Cola - Michigan State University Decision Tree. I tried to check if 7.4.4 a-g would fit but d,e,g seems to not fit in it.

Wondering if any had an audit experience using the Coke-Michigan decision tree? Is this acceptable now?

Hi Alvindman, please do not post the similar query on multiple threads.

Where you have posted the coca cola document you can discuss about it there.

Simon
