Hello,
Hope everyone is having a super day. My question is this. We make a washed rind semi- soft cheese which is aged in a cooler for a week. It is washed twice with a B. Linen mixture. A mold appears on the surface of the rind at about a two week time period. The mold is about a pin point black to dark grey mold and is easily scraped off. Does anyone have any idea where it might be coming from? The cheese is stored on trays on a rolling cart in the cooler. The cheese is covered in a 2 ply cheese paper and then a plastic bag covers that. Thank you so much for your input.

Perhaps the moisture/humidity in the cooler is too high? Is the cooler properly cleaned out regularly?

Have you tested the mould to find out what it is and swabbed the environment? I know trolley wheels are a great place for micro to happily bimble away untroubled by being cleaned (ie have you washed the wheels on the cart recently?)

Dear GMO,

From the babies' urban dictionary perhaps.

Thanks to both of you for your replies. I do swab the cooler and the carts regularly for Listeria, but that is it. The carts are washed regularly as well. I will send the mold in to be tested. No one else makes this cheese except our company so the acceptable temperature and humidity ranges are kind of unknown but I am going to start monitoring them both. Thank you very much!
