Hello evryone, I just want to know if someone has any experience in measuring water activity in frozen foods. We have measured aw in our frozen meat and got very high values, even above 1 (aw meters have been calibrated and work properly). Does anyone have an explanation why we have aw values over 1?

Dear psunjka,

Probably a measurement error. aw not > 1 unless very unusual system is involved (eg 3rd atttach.), -
