Hi

Does anyone have an assessment template which I can adapt for a bakery production process. Currently I have 1 CCP metal detection but have just purchased a sieve for bagged flour which will now become a CCP. I will cover this in a HACCP review but do I need a formal process risk assement?

I don't but I would question whether it is a CCP... Your bakery of course but it depends on the risks. Personally we've identified our sieves as oPRPs. One of the few oPRPs I agree with to be honest.

Attached may help on your decision and could possibly be used to validate your sieving operation.

It is a yes / no decision tree based on a cross between Codex & Campden Guideline #42 (4th Ed 2009). Section/ tab for PRP, CCP and Allergens. Start on Prp and work through.

I developed it a few years ago when I started writing HACCPs in a revised company format - to help clarify or justify a decision if was not certain one a certain point.

Dear Scotty,

Is my computer (or me) missing something ?

I only see one question for each tab.

Do not see how this generates a hazard risk assessment for a CCP decision.

The allergen tab appears to re-state a legislatory CCP definition. Fair enough, especially for a raw material, but what about contamination ?

No idea as to the Campden reference unfortunately.

Confused. :smile:
