hello everybody

anybody know about the japaneese emulsifier ?

actually we are running trials of our new product similar to batter that are used in coating but we are making it with wheat flour and going to make pastry sheets for wrapping fillings called somosa (indian and pakistani traditional snacks )

before we are importing from overseas and now we are manufacturing we did consult our supplier and they recon us to use japneese emulsifier for humactant property and smooth batter rheology.
i will be thank for all of you if tell me about the japneese emulsifier its chemical name ?

Hi there,

That's kind of vague... Do you have more info on this emulsifier? Tradename or something?

Since it was recommended by your supplier, they were unable to give you more information? There are lots of emulsifier for the baking industries.
