Looking for examples of good risk control plans for retail

Hello...I am looking for guidance/suggestions on where to look for examples of good risk control plans that can be used in multi-concept retail food establishments. I think I would like to focus on CDC Risk Factors, but any ideas or suggestoins would be appreciated. Thanks, Wes

According to me a good academic tool is http://www.cdc.gov/e.../foodborne.html, especially if you are looking for a risk assessment on a CDC criteria. Just my 2 cents.

Hi Wes,
Please can you confirm the products you are handling or categories if there is a big range.
Do you mean risks for Central Distribution Centers or risks identified by the Centers for Disease Control and Prevention?

Thanks Tony...looking for a corporate support tool that my department can use to assist our field accounts with corrective actions and on-going improvement with regards to CDC risk factors identified for retail operations.

And i presume you did mean the ...Disease.... and Prevention ?
Most people would probably also look under "HACCP"

Thanks, yes I am looking at retail food operations and the Centers for Disease Control 5 major risk factors for foodborne illness. More process based as opposed to specific locations; somethng that has a scope that can cover the different types of food service accounts we manage. We are in healthcare, B&I, schools, universities, sports and entertainment, remote feeding, senior feeding, etc.

IMHO, the No.1 source is Microorganisms in Foods, IMCSF, Vol.6. Encyclopaedic in scope.
