Looking for some help on a sample HACCP plan for a distribution center , the two products we are looking to carry are crab cakes and shrimp skewers. These two appetizers will be received , stored , and shipped frozen.

Still looking for help on this. If I am receiving the product frozen and am not the manufacturer I am assuming my CCP would be temp control at receiving , storage and distribution.

Dear TDM,

It appears you are also seeking help here -

Are you intending to request certification to any particular standard ? This may relate to some required details, eg CCPs. Same comment with respect to any local statutory requirements.

Assuming a generic "traditional" HACCP plan the (CCP) results will typically depend on yr own hazard analysis / flow chart.

If you consider from the results of the (BCPA) analysis that there are no significant hazards in yr flow chart, then zero CCPs will result.

I am assuming that you are not carrying out any re-packing / labelling type activities.

I have experience with receiving / storing // manufacturing / storing frozen goods (but not distribution) and the reception / storage functions for frozen raw input materials are all controlled by PRPs. Distribution would hopefully be similar ?

I know there are a few older threads here on yr type of situation for non-frozen goods which, from memory, discussed the acceptability of a zero-CCP option. Unfortunately I'm not sure where they are located, probably random, eg maybe with respect to BRC storage/distribution standard, maybe in Storage and Logistics Forum, but I'm only guessing.

Rgds / Charles.C

Kind Regards,

Charles.C

My company has a fully functioning HACCP plan/program. We have HACCP plans in place for our pre packaged cold smoked salmon , mackerel, etc. There is no processing/repacking/labeling involved with the product in question.

Our flow chart for this product will be very basic Receiving ... Storage .... Shipping/Delivery

Thank you. I have taken a HACCP course and am about to start the hazard analysis. Was looking for some opinions in advance since I have not done a plan for frozen product before.

OK let's try and keep this question in one topic to avoid confusion and duplication.

Can anyone help with this?
