Hello everyone,

 

I work in a small food company and we are facing difficulties in finding limits for swab tests operated on workers' hands (Staph. aureus, coliforms and E.coli).

 

Can anyone provide me with these standards from a reliable source?

The general consensus is that they should be absent.

 

The risks associated with a positive would dependent on the product and whether it is ready to eat or not. CFA advises for S aureus on hand swabs – persistent carriers should not handle open food.

What should be the limit in the swab sampling for Total viable count / Total plate count ?

 

I would expect clean hands to be less than 1,000cfu.

What should be the limit in the swab sampling for Total viable count / Total plate count ?

 

It might relate to whether you are working in the first stages of a slaughterhouse or packing RTE pizza.

 

Or wearing gloves ?

Hello

 

It also depends if hands do direct contact with the product or u are using gloves. The limits for gloves and hands differ. I hope the above attached file helped you a lot.
