ISO TS 22002-1 Clauses 4-5 Documentation

Hi all

Clauses 4-5 hardly contain direct requirements for documentation. And the requirements are focused on physical (visual) compliance, isn't it?

 

Has anybody examples of best practice which documents and records should be?

 

For me it is plan of territory and buildings layout. 5.7 tells about exceptions for bulk storage.

FedAl,

 

TS 22002 is the prerequisite program requirements of FSSC 22000. 

 

Clauses 4 and 5 of TS 220002 cover the construction and layout of buildings (4), and the Layout of premises and workspaces (5).

 

Basically the TS 22002 is concerned with making sure that you have the basic fundamentals of food safety established before you worry about producing safe food.  It want's to make sure you have a safe and hygienic facility.

 

For documentation of clause 4 you could have a policy that all buildings will be constructed within the guidelines of the section in areas that 4.2 describe. 

 

For example you are not going to put a food factory downhill from a cow pasture as rain water would cause cow fecal matter to flow down the hill and into your factory area. (environment TS 20002 4.2).

 

4.3 wants you to have clearly identified boundaries.  That could be a fence line around your perimeter or no trespassing signs.

 

From what I've seen you should have policies for every section of the code even if it's not directly telling you to have documentation for it.  However there is always documentation you can make.  You can have a perimeter inspection form to check the perimeter of a fence line to ensure it has not been breached (cut).  It's all in how you want to document your system.

 

Does that make sense?  Does that put you in the right direction or do you need more information?

Dear Merle and other colleagues

 

The plant is a part of industrial complex with boundaries and security. The buildings are adequate for safe food production. The territory and buildings plans are available. Common organizations are also well known with pest control system.

We are going to make PRP guide (based on ISO/TS text explanation how it is organized locally) and annual review of effectiveness of each PRP kind. 

 

I think our points of view are very similar

Dear Fed-Al Div,

 

It may well depend on yr product/process which is unknown.

 

The list is intended to formalise (within general umbrella of GFSI) the typical requirements as you will find in many official-unofficial, generic-type, GMP-compilations as used in haccp and which i expect you are already aware of.?

 

Certain aspects may be dictated by legislatory requirements at yr location.

 

Possible mandatory specificities in the ISO document are where you see "shall" in the text.

 

If you wish to see a highly descriptive example of construction type expectations and various other GMP items, the US-CFR/cGMP and CFIA offer considerable assistance, maybe too much in some cases. I daresay there are Russian equivalents :smile:

 

Another way to get a quick idea is to look at a few of the multitude of GMP checklists on the net and in Food Standards like BRC/SQF which essentially target the same thing in a concise format.

 

If you are looking for relevant forms, some do exist on this forum but not in any compilation format AFAIK (but maybe[?] on CFIA website).

 

Additionally, I am sure some of the commercial packages on this forum/website offer such, ready-made, documentation. :smile:
