I'm not sure if this is a "question" per se, but when changing culture, there are a few statements I always need a good answer/ quick response to -

 

"We've always done it this way"

"No one has ever gotten sick before"

"Do I really have to to that every time"

"That's going to eat into production time"

"Why do I have to wear a hair net if I'm bald"

"Why do we have to label it if I'm coming in the next morning? I know what the product is"

"That costs too much"

"I'm using it!" (When I see raw material uncovered for a period of time & ask them to put a lid or cover on it)

"The sink is too far away to walk to when I change gloves"

"Its only a little _____"  (previous product, contaminant, over/under weight, physical defect)

"If I can't use a sponge or green scrubby, what do you expect me to use"

 

So I guess my question would be how to respond in a polite yet professional matter, and how to make sure other managers are responding that way.

Thank you very much for everybody that send me comments or question. I will do my best to answer it one with my point of view.

 

I'll want to ask how food safety culture can be enforced in open market in a 3rd world countries.

I would like to understand better the meaning of open market in this context.

Is it possible to create a Food Safety Culture if there is low management commitment?

 

No. In my vision they need to provide the resources and example. One good example from management could be to include Food Safety Culture in the strategic plan. Without commitment from all, including the management the work to implement Food Safety could be eternal. But, we as technical and management systems specialists need to empathize with them and determine how we can bring them more results through Food Safety. The challenge for us is to sell them the Food Safety Culture as a way to improve results, to protect the image, and so on, using facts and data.

How would you improve food safety culture in politicians? 

This is essential in improvement food safety standards in any country...  If the question is about politicians: Open the eyes of the people who vote for them, using webinars, volunteer  work, personal example like teaching our children, participating in the legislative process.
 

I believe the question was how reinforce the food safety culture in a company that deals with a lot of internal politics.

The decisions of business are more important than the decisions of food safety. For me it is by using integrated management Systems to define a unique policy and including management systems in the Strategic plan. Like the picture below. The business always will want money and we need to learn how to unite  those interest. It is not easy but is one way that I am thinking. We need to practice empathy in all levels.
 

How can one introduce and develop a food safety culture in the hotel industry?

By management commitment, investing in education and training of the people and hands on the job after a good implementation plan.
 

Here in the US we face situations of Food Safety being put to the side because of politics, business decisions and profit. How to change that view?

It is not easy but one exercise that I am thinking we need to do is practice empathy considering their vision in order to understand why they are acting in this way, so we can define how to react. Educate them is a good challenge for us, so we need to learn how show them numbers about recalls, image damage, lost business and so on.
