Maintenance personnel must observe proper hygienic and food safety practices when working on or near product zone and equipment. Tools should always be cleaned and sanitized while working in food contact areas and around products. Tool boxes and carts should be maintained in a clean and orderly manner. Measures must be taken to prevent parts and tools from inadvertently being left near or on the equipment and possibly entering into the product flow or contaminating the product. Once maintenance activities are completed, the area and equipment should be restored to acceptable sanitary condition.
