Dear friends

I am working in a spice products manufacturing industry. We have raw material specifications for approval of incoming raw materials. The raw material specifications are prepared with the reference of Indian Standards, FSSAI, & ISO standards. But there are no reference standards are exists for few raw materials.

1. example : We procure Coriander splits. Specification is available for only coriander whole.

2. We procure pepper pinheads, but there is specification for only pepper.

What shall i do in these cases? Can i prepare in-house specifications? if i prepare in-house specification what can be the reference for those raw materials specifications?

If your particular facility requires a very specific raw material then yes, in house specs are required, and you must communicate those effectively to the vendor. The reference would be your recipe or operational requirement.....receive pepper from vendor A, but cannot be other than pinheads; you receive coriander from vendor B, but only receive splits

Then, you must open the material at receiving and ensure your receiving staff know what to look for to verify that the product is what you need and refuse everything else.

National standards do not dictate particular facility requirements, but guide you to so that you remain in compliance if you follow the prescribed plan

You may need to speak with your recipe developer......everyone should be aware of what is arriving VS what is actually required
