An investigation in response to complaints or an outbreak?

 

A general audit of food safety practices to gauge risk/improvements?

IFSQN has a lot of training webinars that can help you get up to speed. A good one to start with would be the interal audit webinar, which will help you identify food safety issues in your kitchen.

 

 

The scope of your question otherwise is a bit broad and I would start by getting familiar with your own local regulations.
