Can anyone advise on what micro testing should be done on vacuum packed potatoes with a shelf life of 7 days.

not my area but from my head  clostridium botulinium...l.mono.. bacillus.. and maybe ecoli..?

They are raw 

 

A possible micro spec follows  plus the vacuum packing adds (non) detectability of C.botulinum (see pdf file).
