Hi all,

 

Our company core business is slaughtering chicken and selling the processed meat.

 

Recently we received a complaint regarding a bulb forming in a MAP-packaging of chicken fillet see picture.

 

Our gas mixture is 30% CO2 and 70% O2.

 

Someone any idea why we have a bulb forming?

We give 9 days for modified atmosphere packaging.

 

Could be a result of microbial activity?

Your gas flushing with oxygen (O2) and Carbon Dioxide(CO2) correct?  You're packing ground and/or dark meat only?


Please stop referring to me as Sir/sirs
