Hello,

My company is starting to use chocolate in another building of ours. I am new to chocolate and have been asked to make cleaning documents for start-up and shutdown. Basically chocolate is poured over an candy mix in a roller machine. We have two tanks for dark and milk chocolate. Anyone have any forms I could look at. Thanks

Hi There,

 

We use chocolate coating machine to coat dried fruits.

Our machine has inbuilt hot scraper which scraps chocolate at last stage of coating.Any left over,staff cleans using SS scraper.

After this belt is cleaned with food safe detergent,rinsed with water,dried with compressed air and sanitized.

 

All these steps are documented on cleaning record sheet.

 

You can include cleanliness of outside surface of pan,underneath pan and room in cleaning record to ensure machine and surrounds are clean before and after shutdown.
