Is anyone know about the safety of gellan gum please?

 

So far, studies done on gellan gum consumption have not found toxic effects. Although it appears to be safe for most people to consume, especially considering it’s typically used in very small amounts, you still want to limit the quantity of any added emulsifiers you consume or cook with, including gellan gum. All stabilizers/thickeners pose potential concerns for interactions, including digestive issues, which some people might experience.

The last European Food Safety Authority (EFSA) re-evaluation concluded that there were no concerns regarding carcinogenic or genotoxic effects, and no adverse effects were found in rats or mice exposed to high doses.

I believe the FAO/WHO Expert Committee on Food Additives (JEFCA) reached a similar conclusion, but noted potential laxative effects at high intake, although the EFSA review reported intakes of up to 200mg/kg BW per day over three weeks didn't produce any adverse effect in humans, so it would presumably require really very high doses to trigger this potential laxative effect.

Nonetheless, I believe that whilst it is approved for use in the US, the FDA hasn't granted GRAS status.
