Hi 

 I am working in a bakery and we are seeking GFSI certification ... i am just wandering what kind of environmental control program that i can implement in our facility ??? and if air monitoring is compulsory ?/

You will have to do a risk assessment. However I worked at a bakery before and we did Listeria, Salmonella & E.coli. For air do you use air for processing? Does the air directly contact your food?
