Webinar Overview:

FSMA requires food manufacturers to conduct a hazard analysis of their ingredients, process, and products. In addition, a formal supplier verification program also is a FSMA requirement. In times long past, ingredients of animal origin were thought to be the greatest risk; however, we now know that many ingredients can carry biological, chemical, or physical risks. Beyond pathogens, toxins, and foreign objects, ingredient risk can also include undeclared allergens, economic fraud substitutions, and consumer perception risk such as GMOs, organic, free range, etc. This session will provide an overview of ingredient risks that can be incorporated into a Food Safety Plan and into other brand protection activities.

Jason  Agustin : You mentioned about the processed cheese and cheddar cheese as not being food fraud in the US the way they are marketed, is there a country where this is considered food fraug though and therefore not sold at all?
Martha Carman : Canada:  CFIA does frequent surveillance and issues reports; however, these reports are mostly about food safety (microbiological) concerns.
Omolara  OKUNLOLA  : There is a large scale of food fraud on the so called "novel foods" in Nigeria.
Ehsan ul Haq : In restaurants and catering, particularly for making sweets, various chemicals like ammonia, hydroxides  are used without any measurements. Is there any threshold for such chemicals or their use is illegal at all?

Omolara  OKUNLOLA  : What of sale of flavoured milk drinks that do not contain milk at all. can this be seen as food fraud
Kelly Gamble : We pack honey for retail, our sources being honey imported from Argentina and the Yucatan Peninsula. As you might imagine, our #1 question from consumers is how they know we are not using Chinese or otherwise trans-shipped honey. We of course test our honey to know that it is free from pesticides, antibiotics, other chemicals, that sugar ratios are correct, etc. And we test for pollen. What is the best resource to be able to compare the pollen test results with the regions from which we are importing? Thank you!

Samantha Van Ollefen : Hi Kelly Gamble! You could consider asking your supplier for a Certificate of Analysis. Ideally they're also doing their own testing to prove to their customers that their product is in fact what they say it is.
Samantha Van Ollefen : ... And a best case scenario would be that they're having their product tested by an external lab rather than in house!

Ehsan ul Haq : intentional or unintentional deviation from the standard recipe  by any food handler in catering if it causes health issue, is it punishable offense or is there other provision that addresses this issue?

Kelly Gamble : Thank you, Samantha and Crystal! Yes, most of our suppliers use Intertek for testing. Their reports utilize a statement from a Geoscientist to authenticate the pollen source. I was just curious if there is a resource that might be accessible to industry, or the general public. Thank you!
Peggy Galloup : USA. is not listing whitners (titanium dioxide) in dairy productsconsidered food fraud?  is there a % allowed before an ingredientmust be listed.
