If you've found evidence of a mouse in the building, the first thing you want to do is a thorough investigation of where the mouse is living. They'll usually be a little balled up bit of wood or other debris as a 'nest' nearby the food source. If they're not living near the food you're providing, then check for entry points: cracks in the exterior walls or other entry point. Seal that up.
Then, it's time to look at root cause. Are you not cleaning enough? Is your pest control program not robust enough? Do you have the proper number of traps in the proper places?

If any of the above do not yield results than consider old fashion way as there seems some harbourage point;

Identify and quarantine any affected product without delay.
If you use an external contractor report the activity immediately. If you don't use one, I'd recommend doing so.

Is the premises fully pest proofed - mice can get through tiny gaps so don't discount small cracks or holes in the areas where activity has been seen. Do you have an ongoing contract with a pest control company? If not it may be something worth looking into as an extra pair of eyes is very handy!
