Hi:

I work in a company which makes soft gummi candies. Our products have low water activity, contain high sugar concentration and do not have proteins.  So they do not provide much favourable conditions for micro organisms. There are no allergens in the plant. We have a sanitation control program. Do we need to consider the sanitation control program as a preventative control?

Thank you in advance.

For the specific product likely no, but you need to consider your environment.  Without adequate and frequent enough sanitation you can have an environment that could contaminate the product microbially and potentially render unsafe (pathogens or mycotoxins from mold).

Hi Charmila,

Thanks for giving a detailed overview of your product. Yes, I would consider your sanitation control program as a PC.

Sanitation is a preventive control.
