Can anybody provide me with some material/books regarding whole process of commercial canning.
I want to know about from equipments till processing time/temperature

Hi FS,

 

The 2 literature links are quite interesting/useful but IMO extremely strange in that nowhere in either of them could I find a single reference to 12D !! Truly amazing.
