frozen storage

thawing

cooking

blast chilling

Hi kings,

 

Some of the Steps may be locationally associated with a Regulatory Requirement which is unknown and therefore (mainly) ignored for present purposes

Since the detailed process is unstated, the degree of analysis is limited..

 

Using one approach, the answers depend on  yr responses to certain questions regarding the Process in which the OP's "steps" occur -

 

(1)  Is there a FS hazard in the step which has a significant risk ? , ie is a "significant hazard" which must be controlled by control measures. >>>>>YES/NO below.

(Whether Yes/No depends on a Risk Assessment, eg if hazards associated with the step are controlled by PRPs/iso22002-1 >> NO, otherwise RA = Likelihood x Severity >>Matrix)

(2)  if answer to (1) is NO, there is no CCP or OPRP associated with the step, ie STOP the analysis for CCP/OPRP

(3)  if answer to (1) is YES, the decision as to whether control measure (or combination of control measures) is OPRP or CCP  depends on responses to Clause 8.5.2.4

chiller storage -  NO

frozen storage -  NO

thawing - Probably NO (some Locations IIRC may have Regulatory Yes)

cooking - YES. Typically a CCP

blast chilling - NO

temperature on distribution - NO
